Paneer Pizza
Serves 4
Ingredients
For the Pizza Sauce
1 cup tomatoes chopped
¼ cup tomato puree
1 tsp garlic
2 pieces bay leaf
½ tsp crushed black pepper
1 tsp sugar
2 tbsp oil
¼ tsp oregano
1 tsp chilli flakes
½ tbsp basil
Salt to taste
3ltr milk
1 tsp vinegar
Salt to taste
Crushed black pepper
Oregano and chilli flakes
1 cup pizza sauce
1 cup cheese
Method
-
In a saucepan, boil the milk and add the seasonings once it reaches a boil. Add vinegar to the milk, and take it off the heat, allowing the milk to separate its curd.
-
Over a muslin cloth, pour the separated milk mixture, and allow the liquid to drain.
-
Once drained, remove the paneer and shape it into a disc.
-
Top the paneer with pizza sauce, desired toppings, and cheese. Bake in the oven until the cheese melts.
-
Cut into slices and serve.
-
In a pan, saute the garlic and tomatoes in some oil. Add the bay leaf.
-
Once the tomatoes are cooked, add the puree, salt and the other spices.
-
Cook for a few minutes. You can use it as it is or blend it in a mixer to get a smoother consistency

Tip: you can use leftover paneer for the base, and store-bought sauce.
